Veggie Breakfast Casserole

Time: 40 minutes (5 minutes prep time, 35 minutes cook time)
A great option for the vegetarians in your life, this egg casserole uses
sweet and bright flavors from onion, cherry tomatoes, and bell pepper.
Since most vegetables are 0-point foods, you can mix and match veggies
depending on the season! For a low-fat cheese option, go with
mozzarella, which also just happens to be one of the best melting
cheeses. For a casserole that serves four, expect it to take a total of 40
minutes

Ingredients:
6 whole eggs
¼ cup mozzarella
½ cup chopped onion
¼ cup halved cherry tomatoes
½ chopped bell pepper
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon Italian

Method;

seasoning Instructions:
1. Grease a baking dish.
2. Preheat your oven to 350-degrees.
3. Whisk eggs into a bowl, and add the rest of the ingredients,
giving it a good stir.
4. Pour into your prepared baking dish.
5. Bake in the oven for 35 minutes, until the eggs are set.
